Đậu bắp nhồi chả cá với đậu bắp giòn, ngọt với chả cá dai, ăn kèm với tương ớt tạo nên vị hấp dẫn cho món ăn. Món này có thể ăn chơi hay làm món chính trong bữa tối cũng rất hợp.
Cá rô phi phi lê ướp cá với ít hành, tỏi băm nhỏ, tiêu, hạt nêm, 20ml dầu ăn, bột bắp và cho vào máy xay nhuyễn. Dùng muỗng lớn quết đều, quết càng lâu thịt cá càng dai.
Đậu bắp rửa sạch, dùng dao dọc nhẹ theo thân quả, ngâm nước lạnh khoảng 20-30 phút cho đậu nhả bớt nhớt. Vớt đậu bắp ra để khô.
Trứng gà đập ra bát tô, đánh tan. Nhẹ nhàng nhồi phần chả cá vào bên trong phần đậu bắp. Làm như vậy cho hết phần nguyên liệu.
Đặt chảo lên bếp, cho dầu ăn vào đợi nóng già và chiên giòn đậu bắp nhồi chả cá cho đến khi hết nguyên liệu. Khi đậu bắp nhồi chả cá chiên giòn chín, gắp đậu bắp nhồi chả cá chiên giòn qua lớp giấy thấm dầu rồi xếp lên đĩa ăn kèm với tương ớt rất ngon.
